Ingredients for Chicken Malai Handi:
(Tsp-Teaspoon; Tbsp-Tablespoon)
- Chicken - 500 gms (curry cut with bones)
Spice Powders:
- Coriander powder - 2 tsp
- Cumin powder - 3/4 tsp
- Red Chilli Powder - 1/2 tsp
- Black Pepper powder - 1/2 tsp
- Green Chillies chopped - 4 nos (1 tbsp)
- Salt 1 tsp
- Garam Masala powder - 1/2 tsp
Other Ingredients
- Onion paste - 2 medium onions (150 gms)
- Ginger garlic paste - 2 tsp
- Whisked curd/yogurt - 120 ml or 5 tbsp
- Fresh cream - 4-5 tbsp
- Coriander leaves chopped - 3 tbsp
- Oil- 3 tbsp
- Butter - 2 tbsp
- Ginger julienned - 2 tbsp
Preparation:
- Cut the chicken into small pieces. Set aside.
- Chop the onions and add it to the grinder. Blend it to a paste.
- Whisk the curd or plain yogurt.
- Fine chop the green chillies and coriander leaves.
- Peel and julienne the ginger to be used as garnish.
Process:
- Heat oil and butter in a kadhai/pan and add the onion paste. Stir and fry on medium heat for around 6-7 mins till light brown in colour.
- Now add the chicken pieces and fry on medium heat for around 2-3 mins till the chicken changes colour.
- Add the ginger garlic paste and mix and fry on medium to low heat for around 3-4 mins till the raw smell is gone.
- Now add all the spice powders other than garam masala powder, salt and chopped green chillies & mix well. Mix and cook on low heat for around 3-4mins till the spice powders are cooked.
- Now switch off heat and add the whisked curd/plain yogurt.
- Mix well and then switch on heat. Mix and cook on heat for around 3-4 mins till oil separates.
- Now add around 150-200 ml water and cover & cook on low heat for around 10 mins till the chicken is cooked and oil separates.
- Now add the fresh cream and garam masala powder and mix and cook on low heat for another 2-3 mins till oil separates.
- Garnish with chopped coriander leaves and ginger slices. Mix and serve.
