Green Chillies (less spicy & roughly chopped), हरी मिर्च Prepared Curd Mixture, तैयार किया हुआ दही का मिश्रण 2-3 heaped tbsp Fried Onions, तले हुए प्याज ¼ cup fresh Coriander leaves (finely chopped), धनिया पत्ता For Curd Mixture 2 cups Curd (beaten), दही 2 heaped tsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर 1 tsp Turmeric powder, हल्दी पाउडर ½ tsp Cumin powder, जीरा पाउडर 1 heaped tbsp Coriander powder, धनिया पाउडर For Punjabi Meat Wale Chawal 2-3 tbsp Oil, तेल 2 tbsp Ghee, घी 2 medium Onion (sliced), प्याज ½ inch Cinnamon stick, दालचीनी 2-3 no. Bay leaf, तेज पत्ता 4-5 no. Cloves, लौंग 7-8 no. Black Peppercorns, काली मिर्च के दाने 2 no. Black Cardamom, बड़ी इलायची Cooked Mutton, पका हुआ मटन 1 tbsp Tender Coriander stems with roots (chopped), धनिया के डंठल और जड़ें 1 tbsp Mint leaves (chopped), पुदीने का पत्ता 1 tbsp Black Peppercorns (crushed), कुटी हुई काली मिर्च Salt to taste, नमक स्वादअनुसार 2-3 cups Water, पानी 700 gms Sella Basmati Rice (soak for ½ hr), भीगे हुए सेला बासमती चावल Salt to taste, नमक स्वादअनुसार 2-3 cups Water, पानी For Raita ½ tsp Fennel seeds, सौंफ ¼ tsp Fenugreek seeds, मेथी दाना 1 tsp Cumin seeds, जीरा Salt to taste, नमक स्वादअनुसार 1 tbsp Chilli flakes, कुटी हुई लाल मिर्च 2 cups Curd (beaten), दही Prepared Masala, तैयार किया हुआ मसाला For Garnish Fried onions, तले हुए प्याज Mint sprig, पुदीने का पत्ता Coriander sprig, धनिया पत्ता Process For Cooking Mutton • In a pressure cooker, add oil, ghee, once it's hot, add onions, mutton with bones and cook for a while. • Add salt to taste, ginger garlic paste, green cardamom, cloves, mace, black cardamom and cook for 2-3 minutes. • Now, add green chillies, prepared curd mixture and cook for another 4-5 minutes until oil separates from the masala. • Add fried onion, fresh coriander leaves, give it a good mix, cover it with the lid and cook for 7-8 whistles or until mutton gets 80-90% cooked. • Leave it aside to depressurize the cooker for a while. For Curd Mixture • In a bowl, add curd, degi red chili powder, turmeric powder, cumin powder, coriander powder and give it a good mix. • Keep it aside for further use. For Punjabi Meat Wale Chawal • In a handi, add oil, ghee, once it's hot, add onion and cook for 4-5 minutes until onions turn light brown in colour. • Add cinnamon stick, bay leaf, cloves, black peppercorns, black cardamom and cook for a minute. • Add cooked mutton, tender coriander stems, mint leaves, crushed black peppercorns, salt to taste, water and give it a quick boil. • Add soaked sella basmati rice, salt to taste, water, give it a good mix, cover it with the lid and let it cook for 12-15 minutes until it's cooked. • Transfer the pulao into the serving dish, garnish it with fried onions, mint sprig and coriander sprig. • Serve hot with prepared raita.
