Potato Stuffing Preparation time: 15 mins Storage time: 3-4 days Ingredients: 500g boiled potatoes Salt to taste Pepper to taste 1 tsp garam masala ½ tsp red chili powder 2 tbsp oil Method: Mash the potatoes. Add all ingredients and mix well. Store refrigerated. 7. Eggless cupcakes Preparation time: 3-4 mins Baking time: 10 mins Storage time: 4-5 days Ingredients: 1 cup flour 1 cup powder sugar ½ cup yoghurt 1 tsp baking powder 2 tbsp oil 1 tsp vanilla essence 2 tbsp tutti fruity Method: Blend sugar in yoghurt. Add vanilla essence and mix. Sift in the flour and baking powder. Fold the mixture. Add oil, tutti fruity and blend. Fill in paper cups and bake at 180C for 10-12 mins. Store refrigerated for 4-5 days. 8. Chicken nuggets Preparation Time: 10 mins Storage time: 3 months (frozen) Ingredients: 500g boneless chicken 2 tbsp flour Salt to taste 10 cloves garlic 2” ginger 2-3 green chilies 1 cup panko bread crumbs to roll Method: mince ginger, garlic, chillies. Make a coarse of chicken in the blender. Mix all ingredients. Shape into nuggets. Dip in water, roll in bread crumbs. Freeze for 3 months. 9. Bread Spread Preparation time: 5 mins.
