INGREDIENTS
Sugar Syrup:
- 1/4 Cup Sugar
- 1/4 Cup Hot Water
Soaking Fruits:
- 3 Tbsp Dried Cranberry
- 2 Tbsp Black Raisins/Munakka
- 2 Tbsp Golden Raisins/Kishmish
- 2 Tbsp Tutti Fruitti
- 3/4 Cup Orange Juice
Cake Batter:
- 1 Cup Whole Wheat Flour/Gehun ka Atta
- 1 Tbsp Dutch Processed Cocoa Powder
- 1 Tbsp Natural Cocoa Powder
- 1/4 Tsp Cardamom Powder/Ilaichi Powder
- 1/8 Tsp Dried Ginger Powder/Saunth Powder
- 1/8 Tsp Cinnamon Powder/Dalchini Powder
- 2 Pinch Salt
- 1 Tsp Baking Powder
- 1/4 Tsp Baking Soda
- 1/2 Cup Orange Juice
- 1/4 Cup Oil
- 1/2 Cup Powdered Sugar
Garnishing:
- Powdered Sugar
- Dried Cranberry
METHOD
- Add the dried fruits to a pan, add orange juice (no added sugar) and cook till the all the juice dried up and coats the fruits. Let the mixture cool down.
- Take whole wheat flour and add the spices, cocoa powder, baking powder, baking soda and salt. Mix well.
- Heat sugar in a pan until caramelised and add hot water to make a caramel color sugar syrup. Let it cool down.
- To a large bowl, add sugar syrup, 1/2 cup orange juice, powdered sugar and oil. Mix well. Add the flour mix and whisk untill smooth. Add the cooked dried fruits mix and fold the batter with a spatula.
- Transfer the batter to a 6” cake tin with parchment paper at the base and greased with oil on the sides.
- Preheat the OTG at 170°C for 10 minutes and then bake the cake for 35-40 minutes. Insert and toothpick or knife in the centre and if comes out clean, the cake is done.
- Let the cake cool down slightly and remove from the mold.
- Dust with some powdered sugar and place cranberries in the centre for decoration.
- Slice, serve and enjoy!
