Soft, fluffy dahi vade made without deep frying & topped with beautiful 3-color dahi 💚🤍❤️

📝 Ingredients
For Vade (Non-Fried – Appe Pan)
• 1/2 cup dhuli urad dal (soaked 4–5 hours)
• 1/2 cup dhuli moong dal (soaked 4–5 hours)
• 1 green chilli
• 1 inch ginger
• Salt to taste
• ½ tsp jeera
• Few drops oil (for greasing appe pan)

• Warm water
• ½ tsp salt
• 1 pinch hing

For 3-Color Dahi
• 2 cups thick fresh dahi (divide into 3 portions)
White Dahi (Sweet) –Dahi & Sugar to taste
Pink Dahi ❤️
• Dahi & Sugar to taste
• 1 tbsp fresh beetroot extract (strain before adding)
Green Dahi 💚
• Dahi & Sugar to taste
• 1 tbsp green chutney (mint + coriander)

• Imli ki chutney
• Masala mix- Roasted jeera powder, Chaat masala, Salt & Red chilli
• Barik Sev
• Pomegranate (anardana)

👩🍳 Method :
Step 1: Prepare Batter
1. Drain soaked Moong dal & urad dal completely.
2. Grind with Salt, green chilli, ginger & very little water into a smooth thick batter.
3. Whisk the batter for 5–6 minutes to incorporate air — this makes vade soft & fluffy.
👉 Batter should be thick but light.

Step 2: Make Vade in Appe Pan
1. Heat appe pan & lightly grease each cavity.
2. Fill each cavity with batter.
3. Cook on low flame 3–4 minutes.
4. Flip gently & cook other side till golden.
5. Remove and repeat.

Step 3: Soak Vade
1. Add salt & hing to warm water.
2. Soak vade for 1 hour.
3. After 1 hour, Gently press between palms to remove excess water.

Step 4: Prepare 3-Color Dahi
1. Whisk dahi & Sugar until smooth.
2. Divide into 3 bowls.
3. Mix:
• Plain in first bowl (white)
• Beetroot extract in second (pink)
• Green chutney in third (green)
Chill for 20–30 minutes for best taste.

Step 5: Assemble Chaat
1. Place soaked vade on serving plate.
2. Pour white sweet dahi generously.
3. Add pink & green dahi artistically (for Holi vibe 🌈).
4. Drizzle imli chutney.
5. Sprinkle Masala mix
6. Garnish with sev & anardana.
