Description

#sponsored May is Mediterranean Diet Month, so I’m sharing an easy, elevated lunch idea that feels a little special but comes together fast. This is a fun way to serve tuna salad in a cucumber boat using @StarKistCo E.V.O.O.® Solid Yellowfin Tuna with Lemon Dill in Extra Virgin Olive Oil and look at those beautiful, tender fillets! StarKist has a whole E.V.O.O.® line with flavors like Basil Pesto, Roasted Garlic, Crushed Red Pepper and more, but I’m using the Lemon Dill for this. It’s marinated in extra virgin olive oil with bright lemon and dill, so it already has a really fresh, flavorful base. #starkist #mediterraneandiet INGREDIENTS 1 English cucumber 1 (5-ounce) Starkist E.V.O.O Solid Yellowfin Tuna ¼ cup greek yogurt 2 teaspoons dijon mustard 2 celery sticks, diced 6-7 small pickles, chopped 1 tablespoon parsley, chopped INSTRUCTIONS 1. Slice the English cucumbers in half lengthwise. Use a spoon to remove the seeded core of the cucumber and set aside for another use. 2. Place the tuna in a medium bowl. Add the yogurt, mustard, celery and pickles. Use a fork to fold the tuna and mix with the dressing. 3. Scoop the tuna mixture inside the hollowed cucumber. Cut each cucumber half in half or thirds and enjoy and immediately
