📌 INGREDIENTS:
For the Veggie Filling:
- 4 medium Potatoes (boiled & mashed)
- 2 Tomatoes (chopped)
- 1 medium Onion (finely chopped)
- 1 Carrot (finely chopped)
- 1 Capsicum (finely chopped)
- Frozen or fresh Peas
- 2 Green chillies (finely chopped)
- 1 inch Ginger (finely chopped)
- ½ tsp Cumin seeds (jeera)
- ½ tsp Turmeric powder
- 1½ tsp Salt
- 1 tsp Coriander powder
- ½ tsp Amchur powder
- 1 tsp Garam masala
- ½ tsp Red chilli powder
- Fresh coriander (chopped)
- 2 tbsp Oil
For the Sooji Dough:
- 1 cup Sooji (semolina)
- 2 cups Water
- 1 tsp Salt
- 1 tbsp Oil (first addition)
- 1 tsp Oil (second addition while cooking)
- Oil for frying
🍽️ METHOD:
Making the Filling:
1. Heat oil, add jeera + ginger — sauté 1 min
2. Add green chillies + onion — cook until translucent
3. Add carrot → peas → capsicum, cook until slightly soft
4. Add turmeric + tomatoes + all dry spices — mix well, cover & cook until peas are soft
5. Add mashed potatoes + fresh coriander — mix well, cool completely
Making the Sooji Dough:
6. Boil 2 cups water with 1 tsp salt + 1 tbsp oil
7. Add sooji gradually (not all at once!) while stirring on medium flame
8. Stir continuously until sooji absorbs water & thickens
9. Add 1 tsp more oil, cook until dough consistency forms & leaves the sides of the pan
10. Transfer to a wide plate, cool completely, then knead with oiled hands
Shaping the Nuggets:
11. Place a portion of dough on a greased plastic sheet
12. Cover and press flat with a plate into your desired shape
13. Place filling in the centre, fold edges and seal neatly
14. Shape into nuggets (square, oval — any shape you like!)
Frying:
15. Heat oil to medium-hot
16. Fry nuggets on medium-high flame for 10–12 mins, flipping gently after 5 mins
17. Remove when deep golden brown on all sides 🔥

- Always chop all vegetables very finely — chunky veggies make sealing difficult
- Both the filling AND the dough must be completely cool before shaping
- Oil your hands before kneading the sooji dough — it prevents sticking
