EASY SUMMER ROLLS

2 meals. 15 minutes.  Luncheon Meat 'Larb' first — julienne, sear, then dress it with shallots, fish sauce, lime juice, toasted rice powder, chili flakes, and mint and herbs. Done. Corned Beef Summer Rolls next. Sear the corned beef, soften rice paper, fill it with mint, onion, capsicum, carrots, and lettuce.
