Steak Hache "Tartare"

I was first introduced to steak haché @le_bon_georges in Paris a few years back and was in awe of its simplicity. Normally served with fries, it felt oddly familiar, but wildly elevated, and deeply satisfying. I always wanted to try a tartare variation of it ever since, so here we go.
