INGREDIENTS:
3lbs mini russet potatoes
3 tbsp Dijon mustard
3 tbsp lemon juice
1/4 cup olive oil
1/2 tbsp salt
pepper to taste
1/2 cup fennel trimmings
1/2 fennel bulb
few sprigs parsley
few sprigs dill
2 sticks green onion
DIRECTIONS:
1. Quarter the mini russet potatoes and place into a large stock pot. Fill the pot with just enough water to cover the potatoes. Cover and bring to a boil (be sure to keep an eye on it as it can boil over)
2. Into a large mixing bowl, add the Dijon mustard, lemon juice, olive oil, salt, and pepper to taste. Whisk together to combine
3. Separate the trimmings from the fennel bulb. Carefully slice the fennel bulb in half and very carefully remove and discard the core bit. Thinly slice the fennel bulb. Add the fennel to the mixing bowl
4. Place together the fennel trimmings, parsley, and dill. Give it a rough chop, then add to the mixing bowl. Finely chop the green onions and add tot he mixing bowl
5. When the potatoes are fork tender, drain and add to the mixing bowl. Give the salad a good mix
