Feed the whole table with this extra creamy, crispy french onion mac & cheese that will surely impress during Thanksgiving, the holidays, or your next cozy dinner party. ✨
*Ingredients:*
_For the caramelized onions:_
- 3 medium onions, thinly sliced
- ½ stick butter
- pinch of salt
- 1 stem of fresh thyme
- 1¼ cups beef broth
_For the breadcrumb topping:_
- 1 baguette, sliced
- 1 tbsp fresh thyme
- 3 tbsp olive oil
- pinch of salt
_For the mac & cheese:_
- 1 stick butter, melted
- 1 cup flour
- 4½ cups milk
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 tsp mustard
- ¼ tsp ground nutmeg
- salt & pepper to taste
- 12–14 oz cavatappi or elbow macaroni
⏱️Total Time: 80 minutes
*1. Make the breadcrumb topping*
Preheat the oven to 350°F. Toss the sliced baguette with olive oil, thyme, and salt. Transfer to a baking sheet and bake for 15 minutes until golden and crisp. Pulse the toasted bread in a food processor and set aside for later.
*2. Make the caramelized onions*
In a large saucepan, melt the butter over medium heat. Add in the sliced onions, thyme, salt, and broth, bringing it to a gentle boil. Stir well and set aside to cool.
*3. Make the mac & cheese*
In another large saucepan, melt the butter over medium heat. Whisk in the flour and milk, stirring constantly until the sauce thickens. Add in the shredded mozzarella, cheddar, mustard, nutmeg, and about ⅔ of the caramelized onions. Stir until everything is well combined. Pour the cooked pasta into the sauce and mix well until fully coated.
