Halwa Ingredients:
• 1 cup ghee
• 1 cup sooji (rava)
• 3 cups boiling water
• Few saffron strands
• ¼ tsp yellow/orange food colour (optional)
• 1 cup sugar (or adjust as per taste)
• 1 tsp cardamom powder
• Cashews, almonds & raisins
Quick Steps:
Roast nuts in ghee and keep aside. Roast sooji on low flame until aromatic. Add boiling saffron water slowly while stirring continuously. Cook until sooji absorbs the water. Add sugar and cook until thick. Mix in ghee, cardamom and nuts, and cook until halwa leaves the sides of the pan. 🌿Kala Chana Ingredients:
• 1 cup kala chana (soaked 8-10 hrs)
• 3½-4 cups water
• Ginger julienne (optional)
• ½ tsp cumin seeds
• 2 bay leaves
• ½ tsp salt
• 1 tsp desi ghee
Pressure Cook:
2 whistles on high flame + 5-6 whistles on low flame.
Spice Paste:
• 2 tbsp coriander powder
• ½ tsp turmeric powder
• 2 tsp red chilli powder
• 1 tsp cumin powder
• 1 tsp black salt
• ½ tsp black pepper powder• • 1 tsp chana masala
• Boiled chana water to make a smooth paste
Tempering:
2 tosp ghee + 1 tsp cumin seeds + ½ tsp hing.
Add spice paste and cook for a minute. Add boiled chana with its water and cook until slightly dry.
Final Touch:
½ tsp garam masala + 1½ tsp amchur powder + 1 tsp kasoori methi + 1 tsp ghee.
Garnish with fresh coriander leaves.
