Go for the ones that are rock hard, dark green in color and the flesh should be very pale. If the mango has soft spots, pickle might get spoilt quickly. The amount of pickling juice that we get depends on how sour the mangoes are... INGREDIENTS:: - Raw Mangoes = 4 KG approx - When these Raw Mangoes are cut into small pieces, their weight = 3 KG approx - When these Mango Pieces are sun dried, their weight = 750 gm approx Note: adjust below quantities as per Mango quantity & your taste preferences - Salt = approx 225 gm - Red Chilli Powder (Kaaram Podi) = approx 375 gm - Fenugreek Powder (Menthi Podi) = approx 45 gm - Cumin Powder (Jeelakarra Podi) = approx 60 gm - Garlic (crushed) = approx 225 gm - Gingelly Oil = approx 750 ml to 1000 ml PROCESS:: - Clean the Mangoes, Peel the skin, Cut them into small uniform size pieces. - Spread the pieces well on a clean cloth & sun dry them for 3-4 hours till water content goes away. Note: Turn around the pieces around 1 or 2 times during sun drying process so that they are dried out uniformly. - Now, put the sun dried mango pieces in to a large plate. - Add: Salt & mix well - Add: Red Chilli Powder & mix well - Add: Some oil in batches & mix well - Add: Fenugreek Powder, Cumin Powder & mix well - Add: Crushed Garlic & mix well - Add: Remaining Oil as required - Taste it now to adjust Salt & Spices as per your preference - Store it in a clean & dry jar. - Pour oil on top of pickle till entire pickle is fully immersed in oil Important Note: Sun-Drying Mango Pieces: The mango slices must be sun-dried until they are dry but the slice should not snap in two when broken. There should be some moisture but otherwise dry to touch.
