Mirchi ke Tipore) is the ultimate chatpata side dish that goes with everything! 🌶️✨
Super easy to make, stores in the fridge for up to a week,
and takes your dal-roti, paratha or rice to a whole new level! 😍
📌 INGREDIENTS:
- 100g Medium-thick Green Chillies
- 2 tbsp Mustard oil
- ½ tsp Asafoetida (hing)
- 1 tsp Cumin seeds (jeera)
- 1 tsp Mustard seeds (rai)
- 1 tsp Ginger garlic paste
Spices (add after frying):
- ¼ tsp Turmeric powder
- ½ tsp Kashmiri red chilli powder
- ¼ tsp Black salt (kala namak)
- ¼ tsp Regular salt
- ½ tsp Coriander powder
- ½ tsp Amchur powder (dry mango powder)
- ½ tsp Garam masala
🍽️ METHOD:
1. Wash & dry green chillies completely — remove stems
2. Roughly chop into slightly large pieces
3. Heat mustard oil until smoking, then let it cool slightly
4. Add hing + jeera + rai — let them splutter on medium flame for 2 mins
5. Add chopped chillies + ginger garlic paste — mix well to coat with oil
6. Cook on medium flame for 5–7 mins until chillies get a light brownish coating
7. Lower flame to the minimum — add all dry spices
8. Mix well so all spices coat the chillies evenly
9. Cover & cook on low flame for 2–3 mins
10. Stir once more — done! Transfer to a bowl & serve! 🌶️
💡 PRO TIPS:
- Always heat mustard oil to smoking point first, then cool slightly before adding spices — removes the raw pungency
- Keep flame LOW when adding spices — prevents burning
- NEVER cover while the chillies are still frying — cover only after adding spices
- Stores perfectly in the fridge for up to a week!
