Heat a kadai on medium flame and add 4 tablespoons of oil. Once the oil is hot, add urad dal, chana dal, and peanuts. Roast them until they turn golden and crisp. Next, add mustard seeds and cumin seeds and allow them to splutter. Add red chillies and asafoetida powder, and sauté for a few seconds until aromatic. Now add finely chopped ginger, green chillies, and onions. Sauté the onions until they turn soft and translucent. Add the chopped tomato, turmeric powder, and salt. Mix well and cook for about 2 minutes until the tomatoes soften and blend with the onions. Now add the chopped idli pieces and gently mix so they are well coated with the masala. Keep the flame low and add idli milagai podi. Mix carefully to coat the idlis evenly. Finally, add curry leaves, chopped coriander leaves, and ghee.
