Ingredients for Thai Basil Chicken Recipe:
(Tsp- Teaspoon; Tbsp- Tablespoon )
- Boneless chicken thighs, cut into small pieces-300 gms
Tempering:
- Thai Bird Chilli/ red chilli, deseeded and fine chopped- 1 tsp
- Garlic, fine chopped- 7-8 cloves-2 tsp (10 gms)
- Spring onion white, sliced - 2 tbsp
Sauce mix:
- Light soy sauce-1 tsp
- Dark soy sauce-1 tsp
- Oyster Sauce-1 tbsp (US measure)
- Brown sugar-1.5 tsp
- Water-1 tbsp
Greens-
- Red peppers julienned- 1/2 cup - 40 gms
- Spring onion greens cut into 1” long pieces- 1/2 cup
- Thai Basil leaves-1 US cup (10 gms)
Other Ingredients:
- Peanut oil-1.5 tbsp
- Salt-1/4 tsp
Preparation:
- Cut the thigh boneless fillets to small pieces.
- Fine chop the peeled garlic and the Thai bird eye chillies after deseeding.
- Slice the spring onion whites and cut the spring onion greens to inch long pieces.
- Prepare the sauce mix and whisk it well. Set aside.
- Take out the Thai Basil leaves.
Process:
- Heat peanut oil in a wok and then add the chopped garlic and Thai chillies. Mix and stir fry on medium heat for 30 secs and then add the sliced spring onion whites. Mix and stir fry for another 30 secs and then add the chicken pieces. Season with salt and stir fry on high heat for 2 mins.
- Now add the julienned red peppers and mix and fry for another minute.
- Now add the sauce mix and stir fry on medium heat for around 2 mins till the chicken is browned and the sauce coats the chicken pieces.
- Now add the spring onion greens and the basil leaves and stir fry on medium heat for another 1-2 mins till it’s browned and the leaves are wilted.
- Serve with white rice
