Creamy Mango Rice Pudding, My brother & Grandma's favourite dessert! | Traditional Me

Though we have plenty of rice in Sri Lanka, rice pudding isn’t something you commonly find on our tables. But because I love experimenting and trying out new dishes, I often end up making rice pudding at home. Since grandmother and brother both enjoy it so much, I decided to make a special version this time, using the last of our Alphonso mangoes. I made it as a beautiful layered pudding. The first layer was fresh, juicy mango cubes at the bottom of the dish. Then I cooked a creamy rice pudding mixture using fresh milk, condensed milk, sugar, cinnamon powder, and a touch of vanilla. I poured this mixture, still hot, over the mango cubes, gently cooking them a little and creating a lovely, unique flavor. For the third layer, I made a coconut sauce with just the right touch of salt — the perfect contrast to the sweet pudding underneath. Finally, I decorated the top with thin slices of mango shaped like flower petals, adding a few fresh mint leaves for that picture-perfect finish. While I was busy with the pudding, brother surprised me with a drink he had just made. It was a refreshing blend of green grapes and long, black grapes — a special variety — with lime juice and crunchy Alphonso mango cubes mixed in. Every sip had a burst of flavor and texture that worked together beautifully. Everyone enjoyed the pudding so much, and seeing their happy faces made me even happier.
