Tips to remember
1. Use a good quality chocolate with around 60% - 70% cocoa because it contains the right balance of cocoa butter and solids to stabilise the emulsion.
2. You can use compound chocolate too. Make sure to chop it into tiny pieces for even melting and mixing.
3. Use hot water, not boiling. This helps the chocolate melt, dissolve and emulsify properly while keeping the mixture fluid while mixing.
4. Surface wrap the ganache with a plastic wrap to avoid a film forming on the surface.
5. Once the ganache is set, whip it into stiff peaks with an electric beater to use as frosting.
