One Pot Ghee Chicken Rice | Easy One Pot Chicken Rice | Chicken Rice Recipe | One Pot Chicken and Rice | Easy Chicken Rice Recipe | One Pan Chicken Rice Serves- 2-3 persons Ingredients for One Pot Chicken Rice: (Tsp-Teaspoon; Tbsp-Tablespoon) - Basmati Rice- 1.5 US cup or 250 gms - Boneless chicken, cut into cubes- 400 gms Tempering: - Cumin seeds-1 tsp - Green cardamom-4 - Cloves-4 - Cinnamon-1 - Black peppercorns-8 - Green chillies (sliced)- 4-5 nos -6-8 gms Others: - Onions sliced-2 small (120 gms) - Ginger, fine chopped- 1 tsp (8 gms ) - Garlic, fine chopped-1 tsp (8 gms ) Spice powders: - Pepper powder - 1/2 tsp - Biryani Masala powder- 2 tsp Other Ingredients: - Salt - 1/2 tsp in chicken + 1 tsp in water to cook rice - Ghee- 2-2.5 tbsp - Water- For 1.5 US cup basmati rice, add 2.25 US cup hot water (around 530 ml) - To finish- - Ghee-2 tsp - Coriander leaves, chopped -2 tbsp - Lemon juice-2 tsp Preparation: - Wash and soak the Basmati rice for around 30 mins. - Cut the boneless chicken pieces into cubes. - Slice the onions and the green chillies - Peel and fine chop the ginger and garlic. - Also fine chop the coriander leaves to be used as garnish. - Have used readymade Biryani Masala. Process: - Heat ghee and add the whole spices for tempering. Give a stir. - Now add the onion and green chillies. Mix and fry on medium heat for around 6-7 mins till light brown . - Now add the fine chopped ginger and garlic, mix and fry on low heat for around 2 mins till light brown. - Now add the chicken pieces, black pepper powder, salt and the biryani masala. - Mix and fry on medium heat for around 6-7 mins till browned. - Add the soaked rice and mix and fry on medium heat for around 2 mins. - Now add the hot water and salt and give a mix. - Cover and cook on low heat for around 15 mins. - Remove lid and give a stir after 7 mins. - Open lid and finish with ghee, chopped coriander leaves and lemon juice. - Give a light mix. - Let it rest for around 20 mins before serving - Give a stir and serve hot along with raita and salad. #onepotchickenrice #chickenricerecipe #onepanchickenrice #chickenrice #chickenricecasserole #spiceeats #spiceeatsrecipes #spiceeatschicken
