Bake them in the LG NeoChef convection oven at 200°C (392°F) for an instant mood-lift.These mini pizzas use mushroom caps as the “crust”, so you get classic pizza flavor—tomato sauce + mozzarella + pepperoni + veggies—in cute, bite-size form with a quick, even bake. Ingredients(makes 4 mini pizzas): • 4 shiitake or portobello mushroom caps • 1 tbsp olive oil • 1 tsp balsamic vinegar • Salt & pepper, to taste • 1 cup tomato pizza sauce • ½ cup shredded mozzarella cheese • ¼ cup grated parmesan cheese • 1 cup mini or chopped pepperoni • Sliced black olives • ½ cup chopped bell peppers (any color) • ¼ cup finely chopped red onion • 2 tbsp chopped fresh basil Instructions(Quick 5-Step): 1. Prep: Wipe mushrooms clean; scrape out gills. 2. Marinate: Mix olive oil + balsamic + salt + pepper. Brush caps (both sides) and rest 10 min. 3. Build: Add ~2 tbsp pizza sauce inside each cap → top with mozzarella. 4. Top: Add pepperoni, olives, bell peppers, red onion → finish with more mozzarella + parmesan. 5.
