🛒 Ingredients:
1 ¾ kilo manok (chicken)
½ cup mantika (cooking oil)
2 bulbs bawang, hiniwa ng pino (garlic, minced)
2 perasong sibuyas, hiniwa (onion, sliced)
3–4 pirasong dahon ng laurel (bay leaves)
1 tsp pamintang buo (whole peppercorns)
Konting black pepper powder
¾ cup toyo (soy sauce)
Hugas bigas (rice wash), enough to slightly cover the chicken
⅓ cup suka (vinegar)
¼ cup asukal (sugar, adjust to taste)
🍳 Step-by-Step Cooking Instructions:
1. Painitin ang kawali, tapos ilagay ang mantika.
2. Igisa ang dahon ng laurel at pamintang buo hanggang sa umamoy.
3. Idagdag ang bawang at igisa hanggang golden brown.
4. Isunod ang sibuyas at lutuin hanggang maging translucent.
5. Ilagay ang manok at igisa hanggang mag-light brown ang kulay.
6. Lagyan ng toyo at konting black pepper powder. Haluin para manuot ang lasa.
7. Idagdag ang hugas bigas, sapat lang para bahagyang matakpan ang manok.
8. Palambutin ang manok at hayaan mag-reduce ang sabaw.
9. Kapag halos tuyo na, ilagay ang suka at asukal (ayon sa panlasa).
10. Huwag muna haluin — hayaan itong kumulo.
