One-Tray Lamb Sausage Bake 🥔

The ultimate easy weeknight dinner, juicy lamb sausages roasted with golden veggies and finished with a drizzle of balsamic glaze. Minimal effort, maximum flavour! 🙌 Perfect for using up whatever veg you’ve got in the fridge, think zucchini, onion, capsicum, or potatoes, and it all bakes together in one tray for easy clean-up. Ingredients • 1 pack (6) lamb sausages • Mixed veggies (zucchini, onion, capsicum + potatoes) • Olive oil • Salt + pepper • Handful of spinach leaves • Balsamic glaze to drizzle Method Preheat oven to 190°C. Chop your veggies and toss with olive oil, salt + pepper. Spread on a tray, add lamb sausages on top and bake for around 30 mins, until sausages are cooked and veggies are golden. Serve over spinach so it slightly wilts, then slice sausages and drizzle with balsamic glaze.
