CUCUMBER TOMATO SUMMER SALAD RECIPE
3 ripe tomatoes, cut into bite-sized pieces (about one pound)
1 English cucumber, cut into bite-sized pieces
1/2 red onion, quartered and thinly sliced
2 avocados, peeled and cut into bite-sized pieces
2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
2 cloves of crushed garlic
1/4 cup of fresh, chopped herbs, such as parsley, basil, cilantro, or mint.
Salt and pepper, to taste
Instructions
Add chopped veggies to a large bowl. Sprinkle in fresh herbs (you can choose one or a combo depending on what you love!).
Drizzle with olive oil and lemon juice. Add fresh, crushed garlic. Toss to combine.
Season with salt and pepper just before serving and enjoy!
NOTES
You can use any fresh herbs you like for this salad. I love a combination of basil and parsley.
When selecting your tomatoes, choose the most beautiful, fragrant, and in-season varieties available. This is the tomato that will taste the best.
