MEXICAN STREET CORN DIP RECIPE:
2 cans (15 oz each) corn (drained) OR 1 bag frozen corn
1 block (8 oz) cream cheese
1/2 cup sour cream (or mayo)
1 cup Monterey Jack cheese
1-2 jalapeños (diced, keep seeds if you want more heat)
Topping: Chili powder and crumbled Cotija cheese (add these after cooking)
Add all ingredients except for the topping to a small slow cooker and heat on low for 1-2 hours. Add toppings and serve with Fritos scoops.
SAUSAGE STUFFED MUSHROOMS RECIPE:
1 lb sausage (hot or mild)
2 packs white button or baby Bells
1 block (8 oz) cream cheese (Softened)
1/2 cup grated Parmesan cheese
2 cloves garlic (minced)
1/4 cup Italian breadcrumbs
2 tbsp fresh parsley (chopped, for topping)
Preheat oven to 375 F. Wipe all mushrooms and remove stems. Place on a baking sheet. Brown/crumble sausage in a large skillet over med-hi heat. When almost done, add minced garlic. Once cooked through, drain the excess grease. Put the sausage back in the skillet, turn the heat to low and add block of cream cheese. Stirring constantly, allow the cream cheese to melt and incorporate all the sausage. Remove from heat and add parmesan and breadcrumbs. Stir to combine. You want the mixture to be pretty stiff. Add a scoop of the mixture to each mushroom and bake at 375 for 20 minutes. Top with parsley and enjoy!
