INGREDIENTS

⚬ 1 pound rigatoni or penne
⚬ 4 cups chicken broth
⚬ 2 (14.5 ounce) cans diced tomatoes, undrained
⚬ 2 tablespoons cornstarch
⚬ 1 cup heavy cream
⚬ 1 cup shredded Parmesan cheese
⚬ 2 tablespoons chopped fresh parsley (optional)
INSTRUCTIONS
1️⃣ In a large deep skillet or Dutch oven over medium heat, heat olive oil. Add sausage and cook for 3 to 4 minutes, until browned.
2️⃣ Add diced onion and bell pepper. Cook for 3 to 4 minutes, until vegetables begin to soften.
3️⃣ Stir in minced garlic and Cajun seasoning. Cook for 1 minute to toast.
4️⃣ Add chicken broth, diced tomatoes, and pasta. Stir and press pasta under the liquid.

6️⃣ Remove 1/2 cup of liquid from the pot. Whisk in cornstarch to create a slurry. Return slurry to pot and stir to combine.
