Recipe - - In a mixing bowl, take 1.5 cup soaked moong dal (soaked for 2 hours) - Into that add, 1/2 cup regular poha, 1/2 cup sooji (semolina), 1 cup sour curd and water as required for the consistency as shown in video - Mix everything and keep aside for half an hour - In that mixture, add 2-3 green chillies and small piece of ginger and now blend everything smooth. - Now in this batter, add salt, 1/2 tsp turmeric, 1 tbs oil and whisk the batter in ONE DIRECTION for 5 minutes. - Then add 1 tsp fruit salt (eno) OR for natural fermentation, leave this batter for 6 hours if you wish to avoid fruit salt. - Mix the batter well and immediately pour it into well greased steamer plate (thali) and sprinkle some red chili powder on the top. - Immediately put it for steaming on high flame for 20 minutes (ensure steamer is already ready piping hot when you are preparing dhokla batter) - Do not forget to cover the steamer. - After 20 minutes, dhokla will be ready. You may enjoy it as such or for additional better taste, can add tadka - To make tadka- we need 2 tbs oil.
