This papad ki sabji is made with urad dal papad.
The papad is made into rolls and the rolls are stuffed with a spiced besan batter.
The papad rolls are then fried and added to a very spicy, chatpati gravy.
This papad ki sabji is unlike the Marwari papad ki sabji that has papad pieces added to the gravy.

Recipe:
Papad ki sabji
Preparation time: 20 minutes
Cooking time: 20 minutes
Serves: 3-4
Ingredients:
For Papad roll:
8 urad dal papad
1 cup besan
1/4 tsp carom seeds
Salt to taste
1 tbsp red chili flakes
½ tsp black pepper powder
1 tsp garam masala powder
1 tbsp ginger chili paste
1 tbsp kasuri methi
For Masala Paste:
½ tsp turmeric powder
1 tbsp Kashmiri red chili powder
1 tbsp Emami Mantra Sabji masala
1 tbsp coriander powder
½ tsp black pepper powder
For Gravy:
2 tbsp oil
½ tsp hing
½ tsp cumin seeds
1 tsp mustard seeds
2 onions, chopped
2 green chilies
2” ginger
6-8 cloves garlic
4 large tomatoes
½ cup yoghurt
Salt to taste
Method:
For the papad roll:
Dip the papads in water and set aside to soften up.
Take besan in a bowl. Add in the spices mentioned and add little water at a time to make a thick paste.
Spread the paste on the papads and roll up very lightly.
Fry the papad rolls in medium hot oil and remove.
For the masal paste, mix all the masalas mentioned with ½ cu pwater and set aside.
For the gravy:
Heat oil in a pan. Add the hing, cumin seeds, mustard seeds and allow to splutter.
Add in the chopped onions and sauté till lightly golden.
Crush the ginger, garlic and green chilies and add to the onions. Saute till fragrant. Now add in the masala paste and mix well. Saute till oil floats on top. Add in pureed tomatoes and salt and cook till oil floats on top.
Add in 2 cups water and yoghurt, mix well and bring to a boil. Cut papad rolls into pieces and add to the gravy. Cook for 2 minutes. Garnish with coriander leaves and serve.
