Eid Special Sufiyani Mutton Biryani done right ✨
Slow-cooked flavours, tender mutton, Basmati Rice coming together for the ultimate feast ❤️
In a Pressure Cooker,
Add,
2 Tbsp Oil
2 Bay Leaves
1 Cinnamon
4 Green Cardamom
1 Black Cardamom
1 Star Anise
4 Cloves
3 Onion Chopped
Cook till Onions are soft, Then add
1 Kg Mutton
2 Tbsp Ginger Garlic Paste
Salt
Cook this well on medium to high flame for 5-7 mins. Then add,
1 Tbsp Coriander Powder
1 Tbsp Cumin Powder
Mix well, Then add 1/2 Cup Water and pressure cook till mutton is tender.
Now in a bowl, Add
Almond Paste (50gms Almonds soaked, peeled and then grind into a paste)
1/2 Cup Curd
1/2 Cup Cream
1 Cup Milk
1 Tsp Black Pepper Powder
1 Tsp white pepper powder
1 Tsp kasuri methi
1 Tsp garam masala powder
1 Tbsp kewra water
6-7 Green Chillies Crushed
Now add the pressure cooked mutton in a separate vessel, And add the prepared white mixture along with,
5-6 Whole green chillies
1/2 Cup Fried Onions crushed
Coriander Leaves
Cover & Cook for 8-10 minutes
Soak 700 gms Basmati Rice for 40 minutes.
Then,
Boil 3 litres of Water with
1 big cardamom
4 cloves
1 cinnamon stick
1 star anise
salt
1 tbsp oil
1 tbsp lemon juice
Add soaked rice and cook on high flame for 6 minutes till 80% cooked.
Now layer mutton and rice together, garnish with coriander leaves and fried onions. Dum for 15-20 mins and enjoy❤️
