This Maharashtrian mango pickle recipe is quite hot, tangy and delicious!
And I have also shared with you a hack on how you can use the air fryer to dry the mango pieces for the pickle. Not only it is very hygienic but also time saving too!
You can use totapuri, rajapuri or ramkela varieties of mang to make the mango pickle as these are best suited.
I have also shared with you how you can sterilise your glass jars with hing to store pickles in them so that they do not spoil.

Mango Pickle
Preparation time: 60 mins
Cooking time: 10 mins
Makes: 5kg
Ingredients:
5kg raw mangoes
2 cup mustard seeds
2 cup fenugreek seeds
½ cup fennel seeds
1 +1 cup salt
100g turmeric powder
200g Kashmiri red chili power
2 tbsp hing
2 L Mustard Oil
Method:
Wash and white the mangoes.
Cut the mangoes into one inch pieces.
Add One Cup salt to the mango pieces and let it rest for 30 minutes to sweat.
Remove all the water that sweats out from the Mango pieces.
Grind the mustard seeds, fenugreek seeds, fennel seeds separately.
Mix together all the spices with the remaining salt.
Hea the mustard oil to smoke point. Add the asafoetida and cool.
Add the oil to the mango pieces and mix well. Store the prepared pickle in sterilised jars.
