Home Cooking Sessions: Veal Milanese. Served with crispy potato’s and a very simple rocket salad. Full recipe below! 👇🏽😍

1. Get yourself a nice bone-in veal loin chop. Cut into chops. About one meaty chop per person is good.
2. French trim the bones by scraping with a knife, then place down and lay over some cling film
3. Use a mallet or rolling pin to pound out the meat evenly till nice and thin. I like mine ultra thin, even less than 1/4 inch. Like super thin. Go thinner than you think
4. Breading station: three bowls, one with AP flour, one with beaten egg, one with panko
5. Cover each thin cutlet with the flour until fully coated, dust off excess, then dip into the egg, drip off excess, then lay into the panko and press the panko firmly into each side till fully coated - repeat and set aside
6. Use the back of a knife to create that classic chequered design
7. Thinly slice up 1-2 potatoes per person, rinse with water, then add to simmering water with sea salt for 3-4 mins
8. Remove and leave to steam dry
9. Bring two pans up to med-high, lace with olive oil + 2tbsp unsalted butter @ allthingsbutter__
10. Once melted, add your cutlet to one pan and in the other, lay your potatoes flat along with some rosemary and garlic
11. Allow them both to cook in tandem and start basting the cutlet, then flip it after ~3-4 mins. Baste continuously with the foaming butter across the bone and main surface, and remove one golden to rest
12. Same treatment with the potatoes, cook till golden all over and set aside
13. For the salad, it’s rocket, cherry tomatoes, sea salt, black pepper, olive oil and a good balsamic vinegar
14. Plate up: potatoes down first, followed by the golden veal Milanese and the salad on the side. Season the cutlet with sea salt and a good squeeze of lemon juice. Enjoy!
