HU TIEU KHO / DRIED PHO / VIETNAMESE DRY NOODLES
SAUCE
1 shallot, thinly sliced
¼ cup sugar
¼ cup oyster sauce
¼ cup soy sauce
¼ water
1 TBSP fish sauce
1 tsp black pepper
Red pepper flakes—optional
Oil, for cooking
GROUND TURKEY TOPPING
5 cloves minced garlic
½ a shallot, minced
1 lb ground turkey (chicken and pork ok)
3 TBSP SAUCE (ingredients listed above)
2 tsp garlic chili paste, chili oil, chili flakes—optional
Dark soy sauce- optional
Oil, for cooking
ADDITIONAL TOPPINGS/ INGREDIENTS
Squid, shrimp, quail eggs, mushrooms, chives, bean sprouts, egg noodles, pho noodles, bean thread noodles
1. SAUCE: heat up a generous amount of oil and saute shallots until fragrant.
2. Once fragrant, add ¼ cup sugar, ¼ oyster sauce, ¼ soy sauce, ¼ water, 1 tsp black pepper and red chili flakes if you are using.
3. Bring this to a boil and then reduce heat and simmer for 2 mins
4. GROUND TURKEY TOPPING: heat up some oil and saute garlic and shallots til fragrant.
5. Once fragrant, add ground turkey or ground meat of choice. Cook until ground turkey is 50% of the meat is cooked then add 3 TBSP of the SAUCE you made in step 1-3.
6. Cook this all the way through. You can add some dark soy sauce for color—this is optional.
7. For my mushrooms and quail eggs, I used canned so these are already cooked. I just need to rinse and drain them.
8. Once all of your toppings are prepared, you can assemble a bowl. The noodles I used cook very fast in boiling water. Noodles in boiling water for 10 seconds is all you need.
9. Assemble a bowl with: noodles, ground turkey, squid, shrimps, quail eggs, mushrooms, bean sprouts and chives. Lastly, drizzle the sauce you made in steps 1-3. Drizzle as much or as little. This can be eaten like this or serve with pickled garlic, pickled onions and chili oil/ chili crunch.
