Tacos:
1.5 lbs Ground Chorizo
10-12 Corn Tortillas
2 cups Shredded Jack Cheese
Chopped Cilantro, garnish
Chopped Red Onion, garnish
Tomatillo Salsa:
5-6 Tomatillos, husk removed
2 medium Limes, juices
½ White Onion
1 Large Jalapeno
½ cup Cilantro
¼ cup Water
Salt, to taste
Instructions:
Preheat a skillet over a medium high heat fire (about 350F).
Add the tomatillos, jalapeno and onion to the griddle to toast until lightly charred. Pull off and add to a blender with the other salsa ingredients. Blend until smooth and set to the side.
Add your chorizo to the skillet and cook for 8-10 minutes until fully done. Then add to a bowl and mix in the cheese until well immersed. Place in the freezer for 10 minutes to cool.
Add to the tortilla a scoop of the chorizo cheese mix, fold over and press to make flat. Add to the griddle to cook for 1-2 minutes per side until nice and crispy.
Serve the taco with cilantro, red onion and salsa. Enjoy!
