Place drained black beans into a medium size sauce pan and bring to a medium heat. Add 1/2 cup of water to prevent beans from burning. Season with salt to taste as set aside. 2. Add washed jasmine rice to a small sauce pot along with the ketchup, salt, and water. Bring to a boil then immediately reduce to a low simmer and cover with a lid. Cook for 12-15 minutes until the liquid is gone and the rice is tender. Fluff the rice and cover to keep warm. 3. Mix the ground Beef or substitute with the taco seasoning. Heat a large saute pan to high heat and add 2 tbsp oil. Add the ground Beef to the pan and cook through, about 8-10 minutes. The beef should have some color but not be dry. 4. For the avocado sauce, combine all ingredients in a blender and blend on high. Season further if needed to taste. 5. Heat the 16 inch tortilla over a low heat just to make it easier to work with. This should only take a few seconds. 6. Place the tortilla on the cutting board and build your burrito. Start with the beef then layer everything else on top. Feel free to adjust the amounts added to your personal XXL burrito. 7. Roll the burrito then sear it seam side down in a large saute pan. This seals the burrito. 8. Optionally, wrap the burrito in foil or parchment paper after searing to let everything rest. 9. Enjoy with a nice Mexican lager! -Find Me- Instagram: [https://www.instagram.com/chefupk/] Twitter: [https://twitter.com/CHEFPK3] Some Links include Affiliate Links, which means I get a small commission when you use them.
