RECIPES FEATURED
TOMATO & CORIANDER CHICKEN
Ingredients
Chicken 1 kg 16 pcs
Oil ½ cup
Lemon juice 2 tbsp
Onions 2 chopped
Tomatoes 3 blended
Coriander leaves chopped 1 cup
Green chilies 4 slit cut into halves
METHOD
Marinate chicken with lemon juice, ginger garlic and with allspice for 30 mins, blend together onion and tomatoes. Heat oil in a pan, add the onion mixture, fry until oil separates, add in all the dry seasonings with chicken, cover and cook for 10 mins, add 1 cup water, cover and cook till chicken tender, just before serving add 1 cup coriander and green chilies, serve with nan or roti.
GOANESE FISH MASALA
Ingredients
Fish boneless 750 gm
Potato 1 cut into small ½ inch cubes
Onion 1 cup chopped
Curry leaves 20
Tomatoes 2 chopperised
Chili powder 2 tsp
Turmeric ¼ tsp
Oil ½ cup
Ginger garlic 1 tbsp
Vinegar 2 tbsp
Cumin 1 ½ tsp crushed
Coriander leaves 2 tbsp
METHOD
Heat oil in a wok, add chopped onion and curry leaves, fry till light golden, add potatoes, cook for 5 mins, add all the seasonings, ginger garlic, cover and cook till potatoes nearly done, add chopperised tomatoes, fry well, add fish, cook for 10 mins, do not cover, cook open till oil comes on top, lastly add chopped coriander, serve with boiled rice.
