Recipes:
Paneer Pepper Fry
Preparation time: 10 minutes
Cooking time: 5 minutes
Serves: 2-3
Ingredients:
250g paneer
For the pepper fry masala:
2 tbsp roast urad dal
20 curry leaves
2 tbsp black pepper corns
2 tbsp coriander seeds
4-5 dries red chilies
For tempering:
2 tbsp oil
1/2 tsp roast urad dal
7-8 curry leaves
2-3 dries red chilies
1 tsp mustard seeds
½ cup minced onions
1 tbsp minced ginger
1 tbsp minced garlic
1 tsp minced green chilies
salt to taste
1 tbsp lemon juice
coriander leaves
2 tbsp yoghurt
Method:
Dry roast urad dal, curry leaves, pepper corns, coriander seeds, red chilies till fragrant and crush to make a coarse powder.
Heat oil in a pan. Add the ingredients for the tempering and allow to splutter.
add in paneer cubes and stir gently till lightly golden on the outside.
add pepper fry masala to taste, salt to taste, lemon juice, chopped coriander, toss gently and serve!
Paneer Kalimirch
Preparation time: 10 minutes
Cooking time: 5 minutes
Serves: 2-3
Ingredients:
250g paneer
½ cup yoghurt
1 tbsp ginger garlic paste
1 tbsp pepper powder
½ tsp cumin powder
½ tsp garam masala powder
Salt to taste
3 tbs oil
½ tsp caraway seeds
1 bay leaf
3 green cardamoms
½ mace
½ cup cream
1 tsp kasuri methi
Method:
Blend together the yoghurt with the ginger garlic paste and powdered spices, mix in paneer cubes.
Heat oil in a pan. add the whole spices and allow to splutter.
Add the paneer with all the marinade and cook for 4-5 minutes till the masala is fragrant.
Add the cream and simmer for 2 mins. Add kasuri methi, mix well and serve.
Paneer Butter Masala
Preparation time: 10 minutes
Cooking time: 5 minutes
Serves: 2-3
Ingredients:
250g paneer
2 large onion
5-6 garlic cloves
2” inch ginger
1 green chili
2 + 2 tbsp butter
2 tbsp oil
¼ cup cashew nuts
1 tsp caraway seeds
1 tbsp Kashmiri red chili powder
½ tsp turmeric powder
1 tsp garam masala
1 tsp kasuri methi
1/4 cup fresh cream
2 bay leaves
2” cinnamon
2 black cardamoms
5-6 cloves
½ tsp caraway seeds
Fresh coriander leaves for garnishing
Method:
Roughly chop the onions, tomatoes, ginger. Pressure cook the onions, tomatoes, ginger, garlic, green chili, cashew nuts with ½ cup water for 2 whistles.
Cool the mixture and grind to a smooth paste.
Heat 2 tbsp butter and 1 tbsp oil in a pan. add ½ tsp red chili powder and add the paneer cubes. Sauté over low heat for 2-3 minutes so that the paneer absorbs the buttery flavor and the chili color.
Remove the paneer and add in the remaining butter, oil, followed by the whole spices. As the whole spices splutter, add the turmeric powder and the chili powder.
Stir and add the prepared paste, salt to taste and saute for 2-3 minutes.
Add the paneer, mix well. Cook further for 2-3 minutes and add in the cream. Mix well. Now add the garam masala, kasuri methi. Mix well and serve.
