Serves: 3-4 | Time: ~30-35 mins ⏱️
🟢 Preparation
Soak 2 tbsp chickpeas for 6 hours, then boil.
🟢 Ingredients
Sauce:
1 cup chopped red bell pepper
½ cup chopped carrot
¼ cup chopped potato
1 cup water
½ tbsp jaggery powder (optional)
½ tsp dry oregano
¼ tsp black pepper powder
Soup Veggies:
¼ cup chopped carrot
¼ cup chopped green beans
¼ cup chopped red bell pepper or bottle gourd
¼ cup corn kernels
2 bay leaves
1 tbsp chopped basil leaves
½ tsp dried oregano
½ tsp dried thyme
3 cups water
½ cup millet pasta*
Other Ingredients:
2 tbsp boiled chickpeas
1 tsp lemon juice
1¼ tsp rock salt
1 tbsp chopped coriander
🟢 Method
1. For sauce: Cook bell pepper, carrot, potato + water covered until soft.
2. In another pot: Add soup veggies + herbs + water + pasta. Cover and cook 15 mins.
3. Blend the cooked sauce ingredients until smooth.
4. Add the sauce + boiled chickpeas into the soup pot. Cook 2 mins.
5. Switch off flame. Add lemon juice, salt, coriander. Stir and serve warm.
Tip: This soup tastes even better after 10 minutes of resting as the herbs settle beautifully.
