Dhaba Style Aloo
Ingredients for Boiled Potatoes:
Water 5-6 cups
Potato cubes 1 kg
Ingredients for Sautéed Veggies:
Oil 2 tbsp
Onion (sliced) 1 cup
Capsicum (julienne) 1 cup
Ingredients for Dhaba Style Aloo:
Oil 1/2 cup
Cumin seeds 1 tbsp
Onion (chopped) 1 cup
Ginger garlic paste 1 tbsp
Tomato (sliced) 1 cup
Red chili powder 1 tbsp
Coriander powder 1/2 tbsp
Black pepper powder 1 tsp
Salt 1 tsp
Kashmiri red chili powder 1 tsp
Yogurt 1/2 cup
Boiled potatoes
Sautéed Veggies
Dried fenugreek 1 tsp
Green coriander as required
Directions for Boiled Potatoes Preparation:
In a pot, heat water and add potato cubes. Boil until 80% done. Set aside.
Directions for Sautéed Veggies Preparation:
In a pan, heat oil and add onion and capsicum. Stir fry for 2-3 mins. Set aside.
Directions for Dhaba Style Aloo Preparation:
In a pot, heat oil and add cumin seeds and onion. Cook until translucent.
Now add ginger garlic paste and cook for a minute.
Add tomatoes, red chili powder, coriander powder, black pepper powder, salt, kashmiri red chili powder and cook for 3-4 mins.
Now add yogurt and cook until oil separates.
Now add boiled potatoes and cook for 1-2 mins.
Add veggies, dried fenugreek and cook for 2-3 mins.
Now dish it out and garnish it with green coriander. Your Dhaba Style Aloo are ready.
