Venison Smash Burger (Maui Nui)

This is literally one of the best "non-traditional" smash burgers I've had in a long time and it really does pack a major flavor punch from the onions and herb spread. Venison from Maui Nui is delicious, versatile, and packed with the most lean protein a person could ask for in a piece of meat, especially when it comes to burgers. They're starting the process of aging all their venison in order to create a truly unique flavor profile and market for venison. Order Maui Nui Venison: https://mauinuivenison.com/lp/byron Maui Nui Mission: https://www.youtube.com/watch?v=cnAuzr-Fl8U&t=1s Ingredients: 1lb venison (Maui Nui preferred), 4oz portions salt and cracked black pepper Sliced Provolone Worcestershire Onions: 2 yellow onions, sliced salt and pepper 2 tbsp worcestershire sauce 2 tbsp balsamic vinegar Herb Spread: 5 tbsp mayo 1 tbsp chopped parsley 1 tbsp sliced chives 1 tbsp tbsp chopped rosemary 1 tbsp Worcestershire sauce 1 tbsp red wine vinegar salt and pepper Buns: Potato Buns 2 tbsp olive oil 1 tbsp rosemary black pepper I had the pleasure of working with Maui Nui venison recently and it's been a very inspiring & delicious experience to say the least. Their mission is all in with the idea of regenerating the island of Maui through nocturnal culling of Axis deer that were introduced to the island in the mid 1950's, and without and natural predators in place for the deer, they're completely stripping the land without and check and balances. Maui Nui has refined their hunting practices in a way that's extraordinarily humane, and yields peak flavor due to the stress free environment they operate in during the late evening hours. Without these efforts Maui will be stripped of its native grasslands that are required for a healthy eco system along with massive soil run-off without a proper foliage system in place.
