Ingredients For the sauce 2 red peppers 1 onion, peeled and diced 2 garlic cloves, peeled and sliced 1tbsp olive oil 1 ½ tbsp tomato puree 150ml passata Salt and pepper, to taste For the Ratatouille 1 medium aubergine 1 green courgettes 1 yellow courgettes 2 medium sized tomatoes Salt and pepper, to season To serve Basil, leaves picked 2 chives 2tbsp olive oil Salt and pepper, to season Method For the sauce, start by carefully charring the pepper. Using tongs, place the pepper straight onto a gas flame, carefully turning until all sides are blackened. Alternatively, roast in a 220°C oven for 30-40 minutes, until the skin is charred. Place the peppers in a bowl and cover with cling film. Leave for 10-15 minutes, then scrape off all the blackened skin and remove the seeds. Chop the remaining flesh into large chunks. Place a frying pan over a medium heat and add the olive oil. Once hot, add the onion and gently fry for 5-8 minutes, until starting to soften. Add the garlic and cook for 1 minute before adding the tomato puree, passata and basil. Cook for 20 minutes, then add the roast pepper chunks. Leave to cool a little, then blend until smooth. Taste and season with salt and pepper. Preheat an oven to 180°C. Finely slice the yellow courgettes, green courgettes, aubergines and tomatoes. Spoon a layer of sauce into the bottom of an ovenproof dish. Arrange the vegetable slices, into a tight spiral on top of the sauce repeating the pattern of one tomato, one aubergine, one yellow courgette and one green courgette until your dish is full. Make sure they are very close together, this will help when it comes to plating. Drizzle with olive oil. Season with salt and pepper. Cut a piece of baking parchment to fit the dish and use it to cover the vegetables. This is sometimes called a cartouche. Place the dish in the preheated oven and bake for 15-20minutes, until the vegetables are softened but still holding their shape. Remove from the oven and leave to rest for 5 minutes. To plate up, place a ring mould onto the centre of a plate. Carefully lift a section of vegetables just larger than the width of the ring. Carefully place it vertically. Lift another section and place across the top. Gently remove the mould. Drizzle the plate with some sauce from the bottom of the baking dish and a little olive oil. Place small basil leaves on the drizzle. Lay a chive over the top. If making two, repeat the plating steps on a separate plate.
