Part of UNICEF’s mission in Mongolia is to address poor nutrition among children, specifically deficiencies in vitamins and minerals. One of the solutions is to improve the quality of school meals, while promoting healthy diets and other best feeding practices among parents and caregivers. Enkhtuul, a UNICEF-trained school chef at a large kindergarten in Ulaanbaatar’s Bayanzurkh district, explains the impact of UNICEF’s support, on everything from how the kitchen staff prepare the meals to the variety of foods served. “Instead of white flour for some recipes, we’re using whole grain,” she says. ‘[We’re] using fewer potatoes. I have learned to cook broccoli, chard and other vegetables.” The kids at school are very receptive to the new dishes, and they recognize that what they are eating is nutritious, she adds. “This generation is well informed about food.”
