Ingredients
Rice Krispies® Layer
● 50 ml or 1/4 cup margarine or butter
● 1.25 L or 5 cups miniature or 40 regular (250 g pkg) marshmallows
● 2 ml or 1/2 tsp vanilla extract (optional)
● 1.5 L or 6 cups Rice Krispies® cereal
Caramel Layer
● 100 ml or 1/2 cup butter
● 397 g or 1 can condensed milk
● 120 g or ½ cup granulated sugar
Chocolate Layer
● 300 g dark chocolate, divided
Directions
Rice Krispies® Layer
1. Lightly grease a 9x9” pan. Line with parchment paper for easy removal. Set aside.
2. Add the marshmallows and butter to a large microwave safe bowl. Microwave on HIGH for 2-3 minutes or until melted, stir until smooth.
3. Stir in the vanilla extract and add the Rice Krispies® cereal. Stir until well coated and empty the bowl into the prepared pan. Press into the pan using a lightly buttered spatula. Allow them to cool for 5-10 minutes.
Caramel Layer
4. Add the butter, condensed milk, and sugar to a medium saucepan over medium heat. Stir continuously until the mixture darkens and turns golden brown like the colour of caramel.
5. Pour over the Rice KrispiesⓇ layer in the prepared pan and spread into an even layer with an offset spatula. Allow the layer to firm up in the fridge or at room temperature before adding the chocolate.
Chocolate Layer
6. Add 200 g of dark chocolate to a large microwave safe bowl. Microwave on HIGH for 60 to 90 seconds. Stir and microwave again for 20 seconds intervals until the chocolate is completely melted.
7. Add 100 g of dark chocolate to the bowl and stir until smooth and melted. Pour over the hardened caramel layer and spread with an offset spatula. Allow the chocolate layer to harden in the fridge or at room temperature until set. Before cutting into bars.
Recipe Notes
While stirring the caramel, small light brown flecks may appear in the condensed milk, this is normal, just keep stirring! If the flecks are black and burned they will need to be strained out or the caramel should be started again.
