📍 RECIPE - KAJU CHICKEN PAKODA 📍
500 grams boneless chicken pieces (small, uniformly cut) washed well, soak in (1 Cup Buttermilk + 1 tsp SALT) for 2-3 hours OR overnight (lid closed and in fridge) if possible.
Squeeze the pieces and drain off buttermilk.
CHICKEN MARINATION:
Salt = 1 tsp
Ginger Garlic Paste = 1 TBSP
Turmeric Powder = 1/4 tsp
Red Chilli Powder = 2-3 tsp
Garam Masala Powder = 1 tsp
Coriander Powder = 1 tsp
Jeera Powder = 1 tsp
Black Pepper Corn Powder = 1/4 tsp
Green Mirchi (Chopped to Small Pieces) = 3-6 small in size (depending on Spice level)
Egg White = 1 egg
Oil = 1 TBSP
Lemon Juice = 1 small lemon
Curry Leaves (chopped) = 2 TBSP
Coriander Leaves (chopped) = 2 TBSP
[ OPTIONAL ] 1/2 medium Onion (sliced)
Mix all above and set aside for 30 minutes to 1 hour.
Note: The batter should be thick and not runny.
Add below to above mix just before frying :
Cashew Nuts = 2-4 TBSP (Soaked ones are better)
Rice Flour / Corn Flour = 1/4 Cup
Keep below aside for later use :
Coriander Leaves = handful
Curry Leaves = handful
Vertically Slit Green Chillies = 4-5
FRYING:
Add oil in a wok and heat it. Then put low medium flame.
Add the chicken pieces into the oil and deep fry them until they turn golden red on low medium flame for 8-10 minutes.
Stir the chicken pieces up and down while frying.
When they are almost done, add slit green chillies and curry leaves into the hot oil.
Fry the chicken pieces for 1 minute along with green chillies and curry leaves.
Remove the fried chicken pieces from oil.
Place a tissue paper on a plate and drain the excess oil from chicken pieces.
Garnish the chicken pakoda with Coriander Leaves.
