• Cumin seeds (Jeera) – 1 tsp (base) + 1 tsp (tadka)
• Coriander seeds (Sabut dhania) – 2 tbsp
• Chana dal – 2 tsp (base) + 1 tsp (tadka)
• Urad dal – 1 tsp (tadka)
• Ginger – 2 small pieces
• Garlic – 3–4 cloves (base) + 10–12 cloves (tadka)
• Dry red chillies – 4–5 (adjust to taste)
• Curry leaves – 15–20 (base) + 12–15 (tadka)
• Salt – 1 tsp (or to taste)
• Coriander stems (dhania ke dande) – handful
• Tamarind pulp – 1–2 tbsp (or small tamarind pieces)
• Jaggery (gud) – 1–2 small pieces
• Asafoetida (hing) – a pinch
• Kashmiri red chilli powder – ½ tsp
