INSTRUCTIONS
Add the crushed crackers to a medium bowl. Stir in the peanut butter, honey, and protein powder until well combined. The mixture should hold together when pressed. If it feels too dry, add 1–2 teaspoons more peanut butter.
Scoop about 1 tablespoon of the mixture and roll into balls. Place on a parchment-lined baking sheet. Refrigerate for 15–20 minutes until firm.
In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 20-second intervals, stirring between each, until smooth.
Dip each chilled ball into the melted chocolate using a fork, letting the excess drip off. Return to the parchment paper.
