🧂 Ingredients
For Marination
½ kg minced meat (keema)
4 tbsp ginger-garlic paste (with some coriander leaves ground in it)
Juice of ½ lemon
1 tsp salt (adjust later)
½ tsp turmeric powder
2 tsp red chili powder
2 tsp garam masala powder (1 tsp initially + 1 tsp later)
100 g yogurt
2 medium onions (thinly sliced and fried golden)
1–2 green chilies (chopped)
Handful fresh coriander leaves
Handful fresh mint leaves
1 tsp kabab chini (cubeb pepper)
A small piece (or 2 small pieces) stone flower (dagad phool) – optional but recommended for authentic flavor
½ cup oil
2 tbsp ghee (mixed into the oil)
For Dry Masala Paste
25 g dried coconut (khopra)
25 g peanuts
5 almonds
5 cashews
2 tbsp poppy seeds (khus khus)
(If unavailable, use sesame seeds)
For Final Garnish & Smoking
Fried cashews
Some reserved fried onions
Fresh coriander & mint leaves
1 tsp lemon juice
1 small piece of burning charcoal
1 tsp ghee or butter (for smoke)
