📌 INGREDIENTS:
For the Batter:
- 1 cup Sooji (semolina)
- ¾ cup Curd (dahi)
- ½ cup Water (first addition)
- ½ cup Water (second addition, after resting)
- ½ tsp Cumin seeds (jeera)
- ½ tsp Salt
- 1 tsp Ginger (finely chopped)
- 2 Green chillies (finely chopped)
- Fresh coriander (chopped)
- ½ tsp Baking soda (add only just before cooking!)
Toppings:
- Onion (finely chopped)
- Capsicum (finely chopped)
- Tomato (deseeded & finely chopped)
- Salt & black pepper powder (a pinch)
- Oil for cooking
🍽️ METHOD:
1. Mix sooji + curd + ½ cup water — rest for 10 mins until sooji absorbs water & swells
2. Add another ½ cup water (slightly less) — mix in one direction to a smooth, medium-thick batter
3. Add jeera, salt, ginger, green chillies & fresh coriander — mix well
4. Add baking soda ONLY just before cooking — never in advance
5. Heat tawa, add oil, pour one ladle of batter & spread evenly (keep thickness even throughout!)
6. Top with finely chopped onion, capsicum & deseeded tomato
7. Sprinkle salt & black pepper on top
8. Cover & cook on low-medium flame for 2–3 mins
9. Drizzle oil, flip carefully, press lightly so veggies stick — cook 2 more mins
10. Serve hot with onion chutney, coconut chutney or ketchup! 🌿
💡 PRO TIP: Add baking soda only when ready to cook — adding it early will flatten the uttapam!
💡 Always deseed tomatoes before adding as toppings!
