Ingredients
For the gravy:
Butter
Mustard oil
Cumin seeds
1 Black cardamom
1 Green cardamoms
3–4 Cloves
1 small piece Javitri (Mace)
8–10 Black peppercorns
1 Dry red chilli
2 medium onions, chopped
Swaroma Ginger Garlic Paste
Swaroma Kanda Lahsun Masala
Tomato puree
For the paneer:
Butter
250 g Paneer, cubed
1 tsp Swaroma Chilli Powder
1 tsp Swaroma Turmeric Powder
Salt to taste
Kasuri Methi
Fresh cream
Method
Step 1: Heat mustard oil and a little butter in a pan. Add cumin seeds, black cardamom, green cardamoms, cloves, javitri, black peppercorns, and dry red chilli. Sauté for 30–40 seconds until aromatic.
Step 2: Add the chopped onions and cook until they turn golden brown.
Step 3: Add Swaroma Ginger Garlic Paste and sauté for 1–2 minutes until the raw smell disappears.
Step 4: Add Swaroma Kanda Lahsun Masala and add 1cup of water, cook for a few seconds.
Step 5: Pour in the tomato puree and cook on medium heat until the masala thickens and the oil starts separating.
Step 6: In another pan, melt some butter. Add the paneer cubes, Swaroma Chilli Powder,
Swaroma Turmeric Powder, and kasuri meethi. Toss gently for 2–3 minutes until the paneer is lightly coated with the spices.
Step 7: Transfer the sautéed paneer to the prepared gravy and mix gently.
Step 8: Crush Kasuri Methi between your palms and add it to the curry. Stir in fresh cream and cook for another 2–3 minutes on low heat.
