Description
In this first episode of the Bikaner Food Series, Veggie Paaji explores the authentic winter-special delicacies of the city, visiting legendary shops with decades of history.
• Putra Brija Maharaj (Baba Bhatti): The food tour kicks off at the famous Baba Bhatti lane, where Veggie Paaji visits Putra Brija Maharaj. This 100-year-old shop is unique because they prepare Ghewar only during the winter months (November to Makar Sankranti), believing the winter weather makes it softer compared to the monsoon variety. He tries their Rabri Ghewar (approx. ₹220), praising the generous topping of fresh Malai/Rabri and the perfect sweetness of this seasonal treat.
• Graduate Kanji Vada (Satta Bazar): Next, he heads to Satta Bazar (Chai Patti) to visit the popular Graduate Kanji Vada stall run by Sukhdev Acharya. Here, he tastes the signature Bikaneri Kanji Vada. Unlike standard vadas, these are made from Moth Mogar Dal, giving them a firm texture. They are soaked in a spicy, fermented mustard water (Kanji) that serves as a potent digestive drink.
• Manka Maharaj Rabri Wale (Joshiwara/Mohta Chowk): The final stop is the visually stunning Manka Maharaj Rabri Wale, run by Gopi Joshi. The shop features a traditional setup with multiple coal hearths (bhattis) boiling milk in large iron kadhais. Veggie Paaji showcases the art of making Lacchhedar Rabri by layering cream and enjoys a warm plate of Rabri (₹40/plate), which is rich, milky, and less dry than typical khurchan.
