INGREDIENTS

Salad base
* 4Â medium carrotsâ
* œ cup fresh cilantro, chopped
* œ avocado, cubed
* Œ cup unsalted roasted peanuts, chopped
* 1 Tbsp toasted sesame seeds

Dressing
* œ lime, juiced
* 1Â garlic clove, crushed
* 2 Tbsp extra-virgin olive oil
* 1 Tbsp rice vinegar
* 1 Tbsp reduced-sodium soy sauce
* œ Tbsp maple syrup
* œ Tbsp toasted sesame oil
* 1 tsp grated fresh ginger
â Â For us, 4 carrots weighed about 500g. We used a mix of multicoloured carrots (purple, orange, and yellow), though regular orange carrots work perfectly too.
DIRECTIONS
1. In a large jar or bowl, combine the dressing ingredients.
2. Use a vegetable peeler to peel the carrots into long ribbons.
3. Add the remaining salad ingredients to the jar, then layer the shaved carrots on top.
4. Secure the lid and shake, then let sit 5 to 10 minutes so the carrots soften slightly.
5. Enjoy from the jar, or empty into a bowl. Enjoy!
