Episode 5 of #SimplyStrawberry, where everything is sweet, simple, and strawberry-filled🍓❤️ This eggless Chocolate Strawberry Pull Me Up Cake is one dessert you don’t want to miss ❤️ Ingredients 🍓¾ cup oil 🍓¾ cup sugar 🍓1 cup curd 🍓⅓ cup espresso 🍓1 cup all-purpose flour 🍓6 tbsp cocoa powder 🍓½ tsp baking powder 🍓¼th tsp baking soda For the chocolate ganache 🍓¾ cup dark chocolate chips 🍓⅔ cup fresh cream For the strawberry compote 🍓5-6 strawberries 🍓½ tbsp sugar 🍓1 tsp cornflour + 1 tbsp water 🍓1 tsp lemon juice For the topping 🍓1 cup melted milk chocolate + 1 tbsp neutral oil 🍓Fresh strawberries, roughly chopped Instructions In a bowl, whisk together sugar, oil, curd and espresso till nicely combined. Sift the dry ingredients over this mixture and mix well. Spread this batter neatly in a baking tray and bake at 180 degrees Celsius for 15-20 mins. While the cake is baking, make the chocolate ganache by combining hot fresh cream and chocolate chips. Mix until smooth and no lumps of chocolate remain. To make the strawberry compote, chop the strawberries very finely and heat over medium heat along with the sugar. Once the sugar dissolves and strawberries start to release the water, add the cornflour slurry and cook until the mixture thickens. Add the lemon juice and turn off the heat Take a 4–5-inch cookie cutter and cut three layers for the cake once it’s cooled. For the assembly, pipe a thing layer of ganache over the 1st layer, make a well with the ganache and fill the inside with strawberry compote. Cover the top with some more ganache and place the next layer of cake over it. Repeat the process two more times and cover the sides of the cake with ganache as well. Let the cake chill in the refrigerator for 30 mins. Carefully wrap an acetate sheet around the cake and tape it tightly.
